I was practically raised on popcorn, it was a staple snack in our home. Sometimes on family movie night, it was even more important that the movie itself!
You’d think that someone who spends as much time in the kitchen and around food as I do, would never miss a meal. But I’m notorious for skipping lunch. It’s never intentional, I just get wrapped up in a project and figure I’ll get to lunch later. When “later” comes, I end up grabbing a handful of nuts and the next thing you know, it’s time to make dinner. Oops!
These days, one of our favourite meals is enchiladas. For the longest time, I bought canned enchilada sauce, because I didn’t want the hassle of making my own. Recently, I found myself without any sauce when I needed it and was forced to make some. And you know what? It was surprisingly easy!
I love chilis! Not only are they hearty and flavourful, but the vegetarian versions are so quick and easy to throw together, making them perfect for weeknight meals. Unfortunately, Dave has not been so easy to win over, claiming that he doesn’t like chili at all! *gasp!* That is, until he met this one.
I don’t know, maybe I was a born food blogger. Even as a kid, I loved to mess around with ingredients. Naturally, my favourite was anything pizza… English muffin mini pizzas? Of course!… Grilled cheese pizzas? Done that too… Frozen waffle pizza sandwiches? You betcha!… But the best was, and still is, the pizza quesadilla.
