You know how they say that it’s what’s on the inside that counts. That’s how it is for this Plain Jane cake. No fancy frosting, no decorative sprinkles… But, has she got personality!

A deliciously spiced cake, with a dense crumb, and diced apples scattered throughout. You could totally eat this one as is… but then you’d miss out on that rich, mapley sauce. Seriously, you may end up making the sauce just to pour over ice cream or over apple pie.

Apple Cake With Maple Sauce

A deliciously spiced, simple apple cake. {vegan}



  • 1 1/2 cups All-Purpose Flour
  • 3/4 tsp Baking Soda
  • 1 tsp Ground Cinnamon
  • 1/4 tsp Nutmeg
  • 1/4 tsp Salt
  • 6 tbsp Coconut Oil (soft like room temperature butter)
  • 1/3 cup Granulated Sugar
  • 1/3 cup packed, Light Brown Sugar
  • 6 tbsp Plain Non-Dairy Yogurt 1
  • 1 tsp Vanilla Extract
  • 1 Apple, peeled, cored, and diced into 1/2-inch pieces2


  • 3/4 cup Pure Maple Syrup
  • 1/2 cup Coconut Milk (canned, full-fat), well shaken
  • 6 tbsp Coconut Oil
  • 1 tsp Vanilla Extract
  • 1/4 tsp Salt


make the cake:
Preheat oven to 350°F. Lightly grease an 8-inch round cake pan, and line the bottom with parchment paper.

Whisk together the flour, baking soda, cinnamon, nutmeg and salt. Set aside.

Cream the coconut oil, with a mixer on medium speed, until soft and smooth. Add the granulated and brown sugar, and continue to mix until light and fluffy. Add the yogurt and vanilla, and mix well, (the mixture may look a little curdled but it will not affect the cake). Add the dry ingredients and, with the mixer on low, mix until just combined (batter will be thick). Fold in the apples.

Spread batter into the prepared pan.

Bake for 28 – 32 minutes, or until an inserted toothpick comes out clean.

Allow to cool 10 – 15 minutes before slicing.

make the sauce:
In a small saucepan, bring the maple syrup, coconut oil, and coconut milk to a boil over medium heat, whisking occasionally. Boil for about 5 minutes, whisking frequently. Remove from heat and whisk in the vanilla and the salt. Allow to cool slightly.

Spoon the sauce over cake slices just before serving.

Best served warm.


1. Choose a thick, mild flavoured yogurt. I use unsweetened coconut Yoso. If you can’t find a suitable yogurt, my Sour Cream makes a great replacement.
2. Choose an apple that bakes well. I like Granny Smith.
The maple sauce has a tendency to separate. Be sure to whisk it well before serving.
