My Mom has a lot of good ideas. Like making popsicles throughout the summer for cool and refreshing (not ice cream) treats. The execution of those ideas, sometimes she’s not so good at… So, after again spotting her forgotten moulds in the cupboard, I decided to christen them.
I wanted to keep things super simple, and use just what I could find kicking around in the fridge. Turns out that was cranberry cocktail and limes, which worked for me because I happen to love that flavour combo. I also added some coconut yogurt to add a touch of creaminess and keep them from freezing rock hard.
A big shout out to my Mom for the use of her moulds and for being my hand model!

Cranberry Lime Popsicles
Recipe Type: dessert
Makes: 6 popsicles (1/4 cup each)
- 1 cup Cranberry Juice Cocktail (I used Ocean Spray)
- 1/4 cup Plain Non-Dairy Yogurt (I used unsweetened coconut Yoso)
- 3 tbsp Lime Juice (about 2 limes)
- 1 – 3 tbsp Agave Nectar (or sugar)
Whisk together cranberry juice cocktail, yogurt lime juice, and 1 tbsp agave nectar until thoroughly combined and no chunks of yogurt remain. Taste the mixture and add addition agave nectar if needed.
Fill the popsicle moulds and insert sticks… If your mould does not have a fill line, remember to leave 1/8″ space from the top when filling them.
Freeze for 8 hours or overnight.
-The amount of agave you add will vary based on the amount of sugar in your cranberry juice and yogurt, and personal taste.
