Vegan Pepperoni Pizza Quesadillas

I don’t know, maybe I was a born food blogger. Even as a kid, I loved to mess around with ingredients. Naturally, my favourite was anything pizza… English muffin mini pizzas? Of course!… Grilled cheese pizzas? Done that too… Frozen waffle pizza sandwiches? You betcha!… But the best was, and still is, the pizza quesadilla.

These are so quick and easy, you can throw them together and have them on the table long before delivery arrives. Kids will love to put on their own toppings (at least I always did), and they’re super customizable. Plus, since they don’t go into the oven, they’re the perfect fix for those summer pizza cravings!

Vegan Pepperoni Pizza Quesadillas

Pizza Quesadillas are a quick and easy meal the whole family will love!

Ingredients:

  • 1 Tortilla (I used wheat)
  • 1/4 cup Pizza Sauce
  • 1/2 cup shredded Vegan Mozzarella (I used Daiya)
  • 2 tbsp diced Green Pepper
  • 1 tbsp diced Red Onion
  • 10 – 12 slices Vegan Pepperoni (I used Yves)

 

Instructions:

Place the tortilla in a pan or on a griddle over low heat.

Spoon pizza sauce over the tortilla and spread it out, towards the edges.

On one half of the tortilla, sprinkle half of the cheese. Arrange the pepperoni slices evenly on top of the cheese. Then sprinkle the diced pepper and onion over the pepperoni, followed by the remaining cheese.

When the tortilla has become warm and is pliable, fold the sauce-only side of the tortilla on top of the half with the toppings.

Turn the heat up to medium-low, and cook for 1 – 2 minutes. Using a spatula, carefully flip the tortilla and cook for another 1 – 2 minutes. Repeat this process until the tortilla is browned and the cheese is melty throughout.

Remove from heat and allow to cool for 1 – 2 minutes before slicing into wedges.

Serve with additional pizza sauce for dipping, if desired.

 

Notes:
-Don’t be tempted to try to speed things up and increase the heat, as the results will be a burned tortilla and unmelted cheese.

    Wow!! I had no idea there was vegan pepperoni!! 😮 I’ve also never eaten pizza as a quesadilla! Much faster than making a calzone. 😂

    I do have a question though. I’ve bought and used Daiya mozzarella cheese before, and I tried to make a pizza grilled cheese, but the cheese never actually melted. I ended up with burnt bread and strings of cheese. 🙁 Does it ever get as melty as real cheese? Do you have some vegan cheese melting tips?

      I find that Daiya doesn’t melt exactly like dairy cheese (it will never get that stringy texture). That being said, it can melt and make an ooey gooey grilled cheese.

      From the sound of it, you had the heat up too high. The perfect grilled cheese requires patience (this is also true if you’re using dairy cheese). Place 2 pieces of bread, “butter” side down on a grill and cover each with cheese. You want to grill the 2 sides separately at first so that the cheese has a chance to melt. Use a large pot lid that covers both the sides, and grill on medium-low for 1 – 2 minutes, until the cheese starts to melt (check the bottoms occasionally to be sure that they aren’t burning). Then sandwich the two pieces together and continue to grill, uncovered until golden (flipping occasionally).

      I find that moisture helps Daiya melt better. So I used lots of sauce in my quesadillas, or I add a little vegan mayo to my grilled cheese, and I never bake it on top of things (especially uncovered).

      I’ve also heard of some people microwaving their grilled cheese for 15 seconds after grilling it.

        Oh my god. That is some really awesome tips! I’ve never even made a good grilled cheese with diary cheese. 😅 you’re probably right, I may have had the temp too high. I’ll have to dig my daiya out again and give it another shot 😊👏🏼 thank you!!

        Awesome!! I didn’t even know they existed until we went into a new grocery store a few nights ago! I was sooooo excited. I got the strawberry. Y U M. Can’t wait to try the other two. I love their sliced cheese, too. I never had much luck getting the shredded to melt, but the slices melt quite nicely. Those plus GF bread mean I can actually have a grilled cheese!
