Dave’s been on me about making him something healthy to snack on at work. Specifically something that was whole grain, free of refined sugar, moist, and had raisins (ALWAYS with the raisins)… I finally got around to working on it, and was really pleased with the results. Not only are these bars whole grain with little added fat, they are also super soft and moist, with lots of fruity flavour. If raisins aren’t your thing, try them with chopped up dates or dried apricots instead.

Fruit & Nut Bars

Recipe Type: breakfast/snack
Makes: 8 bars

Packed with fruit and whole grains, these bars make a healthy snack or on-the-go breakfast. {vegan}

A soft, cake-like bar, packed with fruit and whole grains. Great for a healthy snack or on-the-go breakfast.

Ingredients:

  • 2/3 cup Whole Wheat Pastry Flour
  • 1 tsp Ground Cinnamon
  • 1/4 tsp Baking Soda
  • 2/3 cup Mashed Banana
  • 1/3 cup Coconut Sugar
  • 5 tbsp Unsweetened Applesauce
  • 3 tbsp Grapeseed Oil (or other mild flavoured oil)
  • 3/4 cup Quick Oats (not instant)
  • 1/3 cup Raisins
  • 1/3 cup roughly chopped Pecans

 

Instructions:

Pre-heat oven to 350°F and line an 8-inch square pan with parchment paper.

Whisk together the flour, cinnamon, and baking soda. Set aside.

Whisk together the mashed banana, coconut sugar, applesauce, and oil until well combined. Add to the dry ingredients and stir until just combined. Stir in the oats, raisins, and pecans.

Spread into prepared pan.

Bake for 15 – 20 minutes, until edges are golden and an inserted toothpick comes out clean (a few moist crumbs are ok).

Cool completely in pan on a wire rack. Cut into 8 bars.

Store at room temperature for up to 2 days or freeze for longer storage.
