This is a classic “buttercream” style frosting. A great base for many different variations.
Makes enough to frost 12 – 18 cupcakes.
Classic Vanilla Frosting
1/2 cup Margarine
1/4 cup Shortening
3 1/2 cups Icing Sugar
1 1/2 tsp Vanilla Extract
1/4 cup Non-Dairy Milk
Beat the margarine and shortening until thoroughly combined. Add the sugar (sift it first if it is very lumpy) and beat until light. Add vanilla and 2 tablespoons of milk, and beat until smooth. Add the remaining sugar and beat until light and creamy (3 – 5 minutes). If needed add more milk a couple of teaspoons at a time, beating well after each addition.
