Peanut Butter and Banana S’mores – Gluten Free

I’ve been at home the last day and a half resting my back. Not sure what, but something I did threw it out of alignment and has left me with this horrible pinching sensation in my lower right back/hip… Anyway, I’m officially board. When I’m bored, I bake. Unfortunately, that’s not really an option right now. However, I did have a few remaining Peanut Butter – Banana Cookies on hand and a craving for s’mores. Not exactly a traditional combination, but oh my did they come out good… Off to self-medicate with another s’more, and cuddle with Harvey.

 

 

 

 

Peanut Butter and Banana S’mores – Gluten Free

(the following ingredients are per s’more)

Peanut Butter and Banana Cookies

1 tbsp Smooth Peanut Butter (I used natural)

1/8 tsp Molasses

6 Mini Marshmallows (I used Dandies)

10 – 15 Semi-Sweet Chocolate Chips

 

Turn oven on broil.

Stir together the peanut butter and molasses. It should thicken and firm up to a soft fudgy texture, if it doesn’t, add a little more molasses.

Spread bottoms of both cookies with peanut butter mixture. On one cookie arrange marshmallows on top of peanut butter, and on the other cookie sprinkle the chocolate chips over peanut butter. Place both halves filling side up on a cookie sheet and broil until marshmallows brown (1 – 2 minutes). Watch them carefully, so they don’t burn.

Gently lift cookies off sheet (they will be soft and break apart easily) sandwich them together. Allow to cool for a few minutes before serving/devouring.

    My partner had something similar happen to his back and it turned out to be a “back spasm”. The pain hit him suddenly and caused him to go to his knees b/c it was so painful…I hope yours isn’t that bad and goes away soon. And awesome way to make an awesome cookie even awesome! Nom!!

      Thankfully it’s not that bad. I think I’ve just pinched something, and if the muscles would just relax everything would be ok… I’m taking Robaxacet, which seems to be helping… That and the s’mores 🙂
