Chocolate and peanut butter… mmmm…
These bars are sturdy enough for travel, making them a natural addition to lunches and picnics. Whole wheat and rolled oats gives them a healthy element that makes you feel good about feeding them to your family, and your family will be delighted to see these treats in their lunch bags. Win-Win.
Peanut Butter Oat Bars
2 cups Rolled Oats
1/2 cup Whole Wheat Flour
1/2 tsp Baking Powder
1/2 tsp Baking Soda
1/2 cup Margarine
1 cup Brown Sugar
1 tsp Apple Cider Vinegar
1/4 c Pureed Soft Tofu
1 tsp Caramel Extract
1/2 cup Smooth Peanut Butter
Pre-heat oven to 375°F and prepare a 9×9 square pan.
Stir together rolled oats, flour, baking powder, and baking soda. Set aside.
Cream the sugar and margarine. Beat in tofu, vinegar, caramel extract, and peanut butter. Blend in the flour mixture.
Spoon the dough into prepared pan, and smooth out top. Bake for 22 – 26 minutes, until a tooth pick comes out clean.
Loosen edges from the pan, and allow to cool completely before adding topping (see below) and cutting.
1 cup Semisweet Chocolate Chips
2 tbsp Smooth Peanut Butter
1/3 cup Peanuts (unsalted), broken into halves
Melt the chocolate chips and peanut butter together over low heat. Spread over bars and sprinkle with peanut halves.
