If you like coconut, give these decadent cookies a try. Even if you are new to baking, this simple recipe will have your coconut loving neighbors knocking on your door. Seriously, as they were baking, the smell just about had me crazy with anticipation.


1/2 cup  All-purpose Flour

2 1/2 cups Shredded Coconut (medium, unsweetened)

3/4 cup Coconut Milk (not light)

1/2 cup Granulated Sugar

1/8 tsp Salt

1 tsp Rum Extract

1/2 tsp Vanilla Extract

Pre-heat oven to 350°F.

Stir together the flour and coconut. In a separate bowl, blend coconut milk, sugar, salt, and extracts, allowing sugar to dissolve slightly. Pour the wet ingredients into the dry and mix well.

Using a tablespoon to measure, drop mounds onto a prepared cookie sheet. Bake for 20 minutes or until lightly browned. Let cool on wire rack.

Makes about 25 cookies.
