Ok, truth? I’m really not into Valentine’s Day at all. I will, however, jump on any excuse to eat chocolate! And since chocolate is like some sort of Valentine’s Day food staple, naturally I had to come up with something chocolatey to mark the occasion.

I know that many people think of gingerbread as a Christmas flavour, but I welcome it’s sweet ‘n spiciness all winter long… Scratch that… I love gingerbread all year long. And I hope you do too, because today I’m sharing gingerbread muffins.
When I think about cupcakes, I envision little kids with messy hands and frosting covered faces… and sprinkles. Rainbow sprinkles everywhere… But you know what, if I’m to be brutally honest, it’s usually me with the messy hands and a frosting covered face… My point is, cupcakes aren’t just for little kids. They’re for us big kids too :-D
‘Twas the week after Christmas, and still in the fridge
were cranberries waiting to turn into a dish.
As usual I bought way too many cranberries for Christmas. Between baking, cranberry sauce, and jam, I use a lot of them at this time if year. So to be sure that there’s always some on hand I tent to over compensate. Oops! :-)
